Complete new-food-trailer service — from concept to handover

Bondi Food Trailers focuses exclusively on new builds. We do not rent trailers and we do not sell second-hand units. Our aim is to deliver a reliable, documented and compliant mobile kitchen so you can start trading with confidence. This page explains designing, buying and running a new food trailer in Sydney.

Below you’ll find detailed guidance on layout planning, equipment selection, NSW council requirements, build timelines, delivery logistics, post-handover care and case studies from Sydney customers. Use the anchors to jump to sections or read straight through for a full walkthrough.

What we build — trailer types explained

We design and construct a wide range of brand-new mobile kitchens. Although every project is bespoke, the following product families cover the majority of our Sydney builds. Each entry includes practical notes for menu operators and venue managers.

Compact coffee & kiosk trailers — small footprint, high margin

Compact units (typically 1.8–2.4 metres of service length) are optimised for espresso machines, grinders, underbench refrigeration and fast service. They work well at morning markets, business precincts and small event stands where space is limited but throughput is steady.

Key benefits: low running costs, easy to tow, quick service setup.

Market & festival trailers — mid-size for high throughput

Market trailers (approx. 3.0–3.6 metres) provide room for a full cookline — griddle and fryer options, refrigeration and scalable storage. These are built for repeated market trade and are easier to service at pop-up events.

Key benefits: more equipment options, better prep space, festival-ready extraction.

Commercial & event trailers — large, heavy-duty builds

Built for sustained volume, commercial trailers include industrial appliances, multiple operators and expanded water capacity. These are commonly used by corporate caterers, stadium vendors and multi-operator festival rollouts. Specifications are highly tailored and quoted individually.

Key benefits: high throughput, long shifts, multi-staff operation.

Materials, equipment and safety — the essentials

We use commercial-grade components and materials selected for durability, hygiene and ease of maintenance. Below are the common choices and why they matter for Sydney trading conditions.

Stainless steel fit-out

We use 304-grade stainless steel for benching and splashbacks — it is durable, corrosion-resistant and easy to sanitise. For coastal or high-salt environments we can advise on additional surface treatments.

Flooring & slip resistance

Non-slip commercial flooring is standard. Kitchens see water, oils and high foot traffic — slip-resistant surfaces, coved skirtings and sealed joints reduce risk and simplify cleaning for council inspections.

Cooking appliances & extraction

We work with trusted commercial appliance brands. Choice of griddles, fryers, combi ovens and refrigeration should match menu throughput and power availability. Proper extraction (canopy and filters) is essential for safety and environmental checks.

Electrical & gas installs

All electrical and LPG systems are installed by certified technicians and tested prior to handover. We supply test certificates for both electrical and gas systems to support council and certifier inspections.

Water, waste & grease

Freshwater and greywater tank sizing depends on shift length and staff numbers — common sizes range 100–300L for smaller trailers. Grease management is often needed for fry-based menus: we design grease containment and advise on disposal logistics for NSW councils.

Our build process — a transparent, documented approach

We follow a structured process to keep you informed and in control at every stage. The steps below are designed to reduce risk, keep timelines predictable and ensure the final unit meets your operating needs.

1. Discovery & feasibility

We begin with a detailed briefing: your menu, staff numbers, service model, site access and power/water availability. This is where we flag constraints that change layout decisions and appliance choices.

2. Layout & 3D mockups

After the brief we prepare layout options and 3D mockups so you can approve ergonomics and service flow before manufacture begins. We focus on operator pathways, prep surfaces and service counters to maximise throughput and safety.

3. Fixed quote & specification

Once the layout is approved we provide a fixed-price quote listing appliances, materials and certification work so there are no surprise costs. Quotes show a starting price (we publish a conservative baseline of $10,000 for very small, basic new builds) but final cost depends on chosen equipment and bespoke features.

4. Approvals & compliance pack

We prepare technical drawings and compliance packs for NSW council and certifiers: floor plans, electrical diagrams, gas layouts and materials specifications. Having these ready speeds up council interactions and inspections.

5. Factory build & certified installs

Manufacture occurs in our workshop under quality controls. Certified electricians and gas technicians complete installations and we perform QA checks and factory testing. Before handover the unit receives test certificates for electrical and LPG systems.

6. Delivery & handover

Delivery includes set-up, operational tests and a short induction for staff. We hand over warranty documentation and operating manuals so you are trade-ready on the first service day.

Sydney & NSW council checklist — paperwork & site prep

Arranging the right documentation in NSW saves time and reduces the risk of non-compliance. Use this checklist when preparing to trade.

  • Food business registration: Register with your Local Council and NSW Food Authority as required for your LGA.
  • Equipment blueprints: Provide council with equipment layout and electrical/gas diagrams (we supply these).
  • Extraction & grease plan: Include extraction canopy specs and grease containment plans for cooking menus.
  • Waste management: Document wastewater and grease disposal arrangements.
  • Power & water confirmation: Confirm mains access or arrange generator/onboard tanking.
  • Insurance & certification: Provide electrical and LPG test certificates, plus Public Liability insurance.

We bundle the common documents in our compliance pack; some councils may request additional forms depending on event rules or local bylaws. If you want us to liaise with council, we can quote that as an additional service.

Delivery, testing and handover

Delivery is more than transport. Our standard handover includes system checks, operating manuals, staff briefings and a final sign-off certificate. If a generator is supplied or mains connection is needed, we verify power draw and compatibility on site and make any final tweaks prior to handover.

Transport & access

Large trailers require clear turning space and a suitable tow vehicle. We advise on access, suggest loading routes and, if necessary, coordinate with delivery partners to reach festival parks and stadium precincts.
